Temperature-controlled alcoholic fermentation (about one week). Cold filtering to stop alcoholic fermentation. Cold tartaric stabilization in February. Blending and bottling in March.
Casale Marchese Cannellino has generous notes of blossom and fruit, especially peach, apricot, pear and apple, typical descriptors for sweet wines. Underlying hints of honey enhance its quintessential sweetness.
A wine that is very soft on first impact evolves a moderate acidity and has a slightly bitter finish. The plush palate and exquisite balance are noteworthy even in the first months after bottling.
